Spelt Sourdough Hydration: How Much Water Does Spelt Need?

Spelt is an ancient relative of modern wheat with a softer, more extensible gluten. Most bakers use less water and gentler handling than for a wheat bread flour loaf.

How spelt differs from bread flour

Spelt (Triticum spelta) is a species of wheat. It contains gluten, so it isn't suitable for people with coeliac disease. Its gluten is typically more stretchy (extensible) and less elastic than modern bread wheat. A spelt dough stretches easily but tears and slackens sooner, and it doesn't hold its shape as firmly. That's why many spelt recipes use lower hydration, fewer folds and a shorter bulk fermentation than wheat recipes.

Starting hydration

FlourCommon starting hydration
White (light/sifted) speltabout 62–70%
Wholegrain (wholemeal) speltabout 65–75%
50/50 spelt and wheat bread flourabout 68–75%

For comparison, many white bread flour sourdoughs sit around 68–75%, and wholemeal wheat goes higher (see whole wheat hydration). Spelt flours vary a lot by mill and harvest, so start low. Add water only if the dough still feels stiff after a 30-minute rest.

German recipes call spelt Dinkel.

FAQ

Does spelt need more or less water than bread flour?

Usually less. Spelt's gluten is more extensible and less elastic, so many bakers start around 62–70% for white spelt and 65–75% for wholegrain spelt, then adjust.

Is spelt gluten-free?

No. Spelt is a type of wheat and contains gluten, so it isn't suitable for people with coeliac disease.

Why is my spelt sourdough flat?

Common causes are too much water, over-mixing, and letting the dough over-ferment. Try a few points less water, gentler folds, earlier shaping, and a basket or tin.

Can I mix spelt with regular bread flour?

Yes. A 50/50 blend is popular and is easier to handle than 100% spelt. Start around 68–75% hydration.
