Rye Sourdough Hydration: How Much Water Does Rye Need?

Rye flour holds a lot of water and doesn't build gluten the way wheat does. Here's how hydration works for rye and rye blend sourdough, with a worked example.

Why rye behaves differently

Wheat dough gets its structure from gluten. Rye proteins don't form a strong gluten network. Instead, rye contains a lot of pentosans (gums) that soak up water and make a sticky, paste-like dough. That's why 100% rye bread is usually mixed rather than kneaded, baked in a tin, and has a dense, moist crumb.

Rye also has active starch-breaking enzymes. Acidity from a sourdough starter helps keep them in check, which is one reason traditional rye breads are made with sourdough and often use a lot of it.

Typical hydration ranges

BreadCommon starting hydration
Light rye blend (10–30% rye, rest wheat bread flour)about 68–78%
50/50 rye and wheatabout 75–85%
100% rye (tin loaf)about 75–100%, sometimes more

These ranges are wide because rye flours differ a lot. Whole rye and coarse rye meal (pumpernickel meal) absorb more water than light or sifted rye. Seeds and grain soakers also add or tie up water. Start in the middle and adjust over a few bakes.

Worked example: 100% rye tin loaf

Rye breads often use a high starter percentage. In the calculator, enter total dough 1000 g, water 80%, starter 40%, starter hydration 100%, salt 2%:

IngredientGramsOunces
Rye flour450 g15.89 oz
Water360 g12.71 oz
Rye starter (100%)180 g6.36 oz
Salt9 g0.32 oz

The starter brings 90 g of flour and 90 g of water, so true hydration = (360 + 90) ÷ (450 + 90) = 450 ÷ 540 = 83.3%. Prefermented flour = 90 ÷ 540 = 16.7% of all flour. Grams are rounded as the calculator shows them (unrounded flour is 450.45 g); ounces are converted from the unrounded figures.

Check the bag for "wholemeal" or "whole grain", which tells you it will need more water.

FAQ

What hydration is best for 100% rye sourdough?

Common recipes for 100% rye tin loaves range widely, roughly 75–100% or more, depending mainly on how coarse and whole grain the rye is. Start mid-range and adjust over a few bakes.

Why is rye dough so sticky?

Rye contains pentosans, gums that absorb a lot of water, and its proteins don't form strong gluten. The dough is paste-like rather than stretchy, so use wet hands or a spatula.

Why do rye breads use so much starter?

Acidity from the starter helps control rye's active starch-breaking enzymes and supports the crumb structure. Many rye recipes use more starter than typical wheat sourdough.

Does adding some rye change wheat dough hydration?

A little. Rye absorbs more water than white wheat flour, so a light rye blend often takes a few percentage points more water than an all-white dough.
