Ounces vs fluid ounces
An ounce (oz) is a weight. A fluid ounce (fl oz) is a volume, and it isn't even the same size everywhere:
- US fluid ounce = 29.57 ml
- UK (imperial) fluid ounce = 28.41 ml
Because 1 ml of water weighs about 1 g, 1 US fl oz of water weighs about 29.6 g (1.04 oz by weight), and 1 imperial fl oz of water weighs about 28.4 g (almost exactly 1 oz). For flour, fluid ounces and weight ounces are unrelated, so always weigh flour.
Cups and spoons differ by country
| Measure | US | UK | Australia |
|---|---|---|---|
| 1 cup | 236.6 ml | 250 ml metric cup (rarely used; UK recipes mostly use weights) | 250 ml |
| 1 tablespoon | 14.8 ml | 15 ml | 20 ml |
| 1 teaspoon | 4.9 ml | 5 ml | 5 ml |
The Australian tablespoon (20 ml) is a third bigger than the US or UK one, which matters for salt and yeast. A cup of flour can weigh anywhere from about 120 g to over 150 g depending on how it's filled, which is why bread recipes, and our calculator, work in weight.
Tips for weighing small amounts
- Many kitchen scales show ounces only to the nearest 0.05 or 0.1 oz. For salt (often 9–12 g, around 0.3–0.4 oz) switch the scale to grams if you can.
- Use the tare (zero) button and weigh each ingredient straight into the bowl.
- Baker's percentages work in any unit. If you work in ounces, the percentages don't change; see how to convert a recipe to baker's percentages.
Common loaf sizes: a 900 g dough is 31.75 oz (just under 2 lb), and 500 g of flour is 17.64 oz. For how much starter to add, see the starter percentage table.
The calculator switches between grams and ounces with one click and converts your numbers using 1 oz = 28.3495 g.

How many grams are in an ounce?
One avoirdupois ounce is exactly 28.349523125 g. For baking, 28.35 g is precise enough.
How many ounces is 500 g of flour?
500 ÷ 28.3495 = 17.64 oz, a little over 1 lb (16 oz).
Is a fluid ounce the same as an ounce?
No. An ounce is a weight; a fluid ounce is a volume. A US fluid ounce is 29.57 ml and a UK fluid ounce is 28.41 ml. For water they're close to an ounce by weight, but for flour they aren't related.
